Arborio Rice with Onion Dressing

1 cup Arborio rice
2 cups water or vegetable stock
1/2 to 1 teaspoon fine sea salt, depending...
1 cup cooked chicken, turkey, or tuna
1/2 cup olive oil and onion style dressing
dark green leaves of lettuce or spinach
In batter bowl or other glass or ceramic bowl, combine rice and water. Cover. Microwave on high for 5 minutes, then on half power for 15 minutes. Fluff with a fork, add salt as desired. Cool. Toss in chicken and the dressing. Garnish and serve on a bed of cold lettuce leaves.
