Apple Muffins

2 cups all-purpose unbleached flour
3/4 cup dark brown sugar
2 teaspoons baking powder
1 teaspoon soda
1/2 teaspoon fine sea salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
2 eggs
3/4 cup buttermilk
1/3 cup olive oil
2 small apples, grated (about 1 cup or a tad bit more, too much will make the muffins heavy)

Preheat oven to 400 degrees. Line muffin pans with cupcake liners and spray brush with oil. In batter bowl, whisk flour, sugar, baking powder, soda, salt, and spices. In another bowl, whisk together eggs, buttermilk, and oil. Add apples and combine with dry ingredients only to mix to moisten. Fill cups nearly full. Bake 20-30 minutes, until golden. Serve right away.
