Parmesan Cheese Crisps

great to use as an appetizer or to toss onto a salad

freshly grated Parmigiano-Reggiano cheese

Heat oven to 350 degrees. Line a baking sheet with kitchen parchment. Sprinkle about 1 tablespoon of the grated cheese in a thin layer to form about 3 inch circles, at least 2 inches apart. Bake until cheese melts and forms lacy, golden chips, about 5-7 minutes. Watch carefully to get the hang of it. Let cool and then with a thin spatula place them on a rack to cool.
