Brush lightly with a good quality mustard, or use plain olive oil. Sprinkle with your seasonings. Place on a hot grill and cook and turn until chicken is done and is a golden brown. Set aside. Prepare brown and white bread slices with mayo and butter. Assemble the sandwich, using lettuce or spinach leaves, topping with a spiced anchovy for those who dare.
