Spinach Souffle

2 tablespoons finely grated cheddar cheese
1/4 cup butter or olive oil
1/4 cup flour
1 cup low-fat milk
1/2 teaspoon fine sea salt
1/4 teaspoon Zip or cayenne
1/3 cup grated cheddar or Swiss cheese
1 cup well drained chopped cooked spinach
4 egg yolks
5 egg whites

Preheat oven to 375 degrees. Butter or oil a 1 1/2 quart souffle dish and sprinkle with the 2 tablespoons cheese. Set aside. In batter bowl, microwave butter or oil 30 seconds. Whisk in flour, milk, salt, and Zip. Microwave on high 1 minute. Whisk well. Microwave another 1-2 minutes, or until thickened. Stir in cheese and spinach. In a separate bowl, whisk the egg yolks and add some of the hot mixture to them, whisking well. Microwave mixture 30-60 seconds. Whisk well. Beat egg whites in a large bowl until stiff but not dry. Fold the cheese mixture into the egg whites very gently, and gently transfer to the buttered dish. Bake about 35 minutes, and serve immediately.
