Fruit with Cherry Dressing

bananas, melons, grapes, etc.

1/2 cup pitted red cherries
2 cloves garlic, minced
1 teaspoon honey or sugar
1/4 cup port wine or orange juice
3 tablespoons balsamic vinegar
1/4 teaspoon vanilla extract
1/3 teaspoon sea salt
freshly ground black pepper
1/2 cup safflower or olive oil

Prepare the bananas, melon, and grapes into bite-sized pieces and place in a bowl or arrange on plates. To make the dressing, cook the cherries, garlic, honey, port or juice, and vinegar in a small saucepan for 4-5 minutes. Puree the mixture in food processor or blender, and then add the oil in a steady stream with the motor running. Drizzle over the fruits and serve.
