In a food processor fitted with the metal blade, combine the remaining fruit, sugar, lemon juice, vanilla, and salt. Process until the mixture is pureed. Transfer to a bowl and stir in the cream and the reserved chopped fruit. Chill for several hours and then freeze according to the ice cream freezer directions.
