Basque Fritters1/2 cup unsalted butter In a small heavy bottomed saucepan bring butter, sugar, salt and water to a boil. Remove from heat, dump in all the flour and beat hard with wooden spoon until the mixture comes together in a ball. Add eggs, one at a time, beating well after each addition. In deep sided saucepan or stock pot, heat oil until thermometer register 375 degrees. In meantime, combine sugar, cinnamon, and ground almonds and set aside. When oil is hot, drop the batter by tablespoons into the hot oil and fry 2-3 at a time just until browned on all sides, usually 2-3 minutes. Drain on paper towels or Fat Mat.
