Fish for One or Two

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. This method steam cooks fresh fish steaks or fillets to perfection. Buy only the freshest and best fish, season with wonderful olive oil and fresh herbs, and sprinkle on just a bit of one of the semi-coarse sea salts when done!

1-2 pieces fresh fish fillets or steaks
dried or fresh herbs, as available
freshly ground pepper
paprika
drizzle of extra virgin olive oil
lemon or orange juice
unrefined semi-coarse sea salt

Wash and pat dry the fish and place on a microwave safe ceramic or glass plate. Sprinkle with herbs, pepper and paprika. Drizzle with a little oil and the juice, if using. Cover loosely with a piece of waxed paper. Microwave on high, using 5 minutes per pound of fish as a guide. One piece usually takes 2-3 minutes......or until fish flakes easily with a fork. Sprinkle with a few grains of unrefined semi-coasre sea salt. Enjoy!
