Buy only the freshest and best fish, season with wonderful olive oil and fresh herbs, and sprinkle on just a bit of one of the semi-coarse sea salts when done! 1-2 pieces fresh fish fillets or steaks Wash and pat dry the fish and place on a microwave safe ceramic or glass plate. Sprinkle with herbs, pepper and paprika. Drizzle with a little oil and the juice, if using. Cover loosely with a piece of waxed paper. Microwave on high, using 5 minutes per pound of fish as a guide. One piece usually takes 2-3 minutes......or until fish flakes easily with a fork. Sprinkle with a few grains of unrefined semi-coasre sea salt. Enjoy!
