Apricot Nut Balls

Great with chilled sparkling wine, or even a sweet Port

1 cup San Benito dried Blenheim apricots
1 cup toasted nuts (almonds or cashews)
1 teaspoon orange or lemon juice
finely chopped salted peanuts or pistacchios, or coconut

Combine all ingredients in food processor with steel chopping blade in place. Blend until pasty. Shape into balls. Roll in the finely chopped nuts or coconut. Arrange on platter and serve.
