Amazing Grazing Crackers

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Use this to pair with Zinfandel or a chilled Chardonnay. Just sit back, pile this on a plate, and use the crackers as "lifters".

1 can oil packed Italian tuna
freshly ground white pepper
1 avocado
Quince Paste
1/2 cup toasted Sunflower Seeds (Honey Toasted Sunflower Nuts)
baby greens

Crispbread Crackers

Drain the tuna and break the pieces into manageable chunks, sprinkle with pepper. Dice the avocado. On a beautiful platter, simply scatter the greens, arrange the tuna, avocado and pieces of the quince paste over tuna chunks. Sprinkle with the toasted sunflower seeds. Arrange crackers and allow diners to scoop the mixture onto their crackers. Or, for a more formal presentation, you can do the arranging of everything neatly piled on the crackers.
