Cauliflower Salad

8 wonton wrappers, any size or shape
1/2 head cauliflower
2-3 green onions
1/2 cup sliced water chestnuts
1/2 cup Trail Mix, or other salted nut mix
salad greens

2 teaspoons toasted sesame seed oil
pinch of brown sugar
1-2 tablespoons soy sauce
3 tablespoon rice vinegar

Cut wonton wrappers into 1/4 inch strips and deep fry in hot oil until golden. Or, if not using the hot oil, simply place the strips on a plate and microwave on high 1-2 minutes, watch carefully, until brown. Combine cauliflower, onions, chestnuts, tail mix and greens in a beautiful bowl. In small measuring cup, whisk together the oil, sugar, soy sauce and vinegar. Toss and serve.
