See Also: Rice · Side Dishes Apricot Red RiceServe this as a cold salad, or warm as a side dish. Pair this with a great Zinfandel or chilled Sauvignon Blanc. 3/4 cup red rice Bring water, rice and salt to a boil in heavy bottomed deep saucepan and then immediately turn down to low simmer. Cover. Cook gently for 25-35 minutes or until rice is tender and water has been absorbed. Or, in batter bowl or microwave rice cooker, combine rice, water and salt. Cover. Microwave on high 5 minutes, then on half power for 20-25 minutes, or until rice is tender and water has been absorbed. Toss with remaining ingredients and serve. I love to just pile some of the cold rice on a plate and then arrange the tuna, ginger slivers, and apricots over the top.
