Turkey or Chicken Burgers

As adapted from Eating Well Magazine, June/July 2005.

1/3 cup couscous
1/2 cup boiling water
2 tablespoons extra virgin olive oil
1 small onion, finely diced
1 stalk celery, finely diced
1/2 teaspoon Italian herbs, or Herbe de Provence
1/2 teaspoon fine sea salt
freshy ground peppercorns, to your desire
1/4 cup or so dried cranberries, diced

1 pound lean ground turkey or ground chicken

Soak the couscous in the boiling water in a batter bowl about 5 minutes. In meantime, heat oil in large heavy bottomed skillet and saute the onion, celery, herbs, salt and pepper several minutes, adding the cranberries towards the end. Transfer the mixture to the bowl with the couscous and blend. Allow to cool about 5 minutes, and then add the turkey. Blend and shape into 4-6 patties.



Grill or pan saute until turkey is done and both sides are nicely browned.
