Edam / Beemster Truffles

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Fabulous with a good quality Zinfandel!

1/4 cup unsalted butter, softened
1 cup finely grated Edam or Beemster cheese
1/2 teaspoon paprika, smoked if you have it
1/8 to 1/4 teaspoon Zip or Cayenne

pumpernickel bread slices, about 4 - 6

If necessary, soften butter 30 seconds in microwave on half power. Do not melt! Beat soft butter, cheese, paprika and cayenne until smooth and creamy. Cover and chill 30-60 minutes. In meantime, with food processor with steel chopping blade in place process the bread until coarsely crumbled. Shape chilled cheese mixture into balls and roll in the crumbs. They are supposed to resemble truffles or mushrooms.
