Grated Zucchini Salad

From Dorothy McNett's Recipe book at www.dorothymcnett.com. You can make a great honey mustard mayonnaise by combining 1 tablespoon honey and 2 teaspoons prepared mustard with about 1/2 cup good quality mayonnaise.

2-3 cups grated or julienned zucchini
1 onion, grated
1-2 tablespoons honey-mustard mayonnaise, or to your taste
salt and pepper
lettuce leaves and freshly sliced tomatoes

In processor with the fine shredder in place, prepare the zucchini and onion and place in a bowl. Or, use a julienne grater. Stir in just enough of the mayonnaise to moisten the vegetables and give them flavor. Snip in the lettuce and the tomatoes, and serve chilled.
