In food processor with steel chopping blade in place, cream the butter, sugar and vanilla. Add the flour and blend just until mixture resembles coarse crumbs. Press into bottom and up the sides about 1 inch of a 9 inch springform pan. Spread jam over the bottom crust. In bowl, soften cream cheese on half power in microwave for 30-40 seconds. Add sugar, egg, and vanilla and blend to make a smooth mixture. Spread over the jam. Toss the apple slices with the remaining sugar and cinnamon and arrange evenly over the filling. Sprinkle with almonds. Bake at 400 degrees for 10 minutes, then reduce heat to 350 degrees and continue baking for about 30 minutes more. Recipe created 2005-09-26. © 1996-2008 Dorothy McNett.
