Apple Torte

1/2 cup unsalted butter
1/3 cup sugar
1/2 teaspoon real vanilla extract
1 cup all purpose unbleached flour
1/2 cup your favorite jam

8 oz cream cheese
1/2 cup sugar
1 large egg
1/2 teaspoon real vanilla extract

4 cups apples, peeled, cored and sliced
1/3 cup sugar
1/2 teaspoon cinnamon
1/2 cup slivered almonds

Preheat oven to 400 degrees. In food processor with steel chopping blade in place, cream the butter, sugar and vanilla. Add the flour and blend just until mixture resembles coarse crumbs. Press into bottom and up the sides about 1 inch of a 9 inch springform pan. Spread jam over the bottom crust. In bowl, soften cream cheese on half power in microwave for 30-40 seconds. Add sugar, egg, and vanilla and blend to make a smooth mixture. Spread over the jam. Toss the apple slices with the remaining sugar and cinnamon and arrange evenly over the filling. Sprinkle with almonds. Bake at 400 degrees for 10 minutes, then reduce heat to 350 degrees and continue baking for about 30 minutes more.



Sprinkle with powdered sugar to serve, or of course, it is very delicious with whipped cream or ice cream.
