Panini

From Dorothy McNett's Recipe book at www.dorothymcnett.com. A version of a grilled sandwich....use a panini maker or even your waffle maker, or just a grill pan will do!

4 slices bread
1-2 tablespoons butter
1-2 tablespoons good quality prepared msutard
sliced ham or other meats
cheddar cheese
thin slices tomato

1 egg, slightly beaten
1 tablespoon milk
salt, pepper, herbs or other seasonings, as desired
3/4 cup organic good quality cereal or corn chips, crushed

2 tablespoons olive oil, or as needed

Preheat the panini grill or waffle iron (non-stick preferred). Assemble sandwiches, spreading butter on 1 side of bread slices, and mustard on the other so that the mustard is on the inside of the sandwiches. In a flat plate like a pie dish, mix the egg and milk with seasonings. Dip sandwiches into egg mixture, then into crushed chips. Pat to secure chips to bread, coating both sides. If necessary, add oil to grill. Cook sandwiches until golden brown, about 1 minute on each side. Slice and serve.
