Batatas a Portuguesa

3 tablespoons butter
3 tablespoons olive oil
1 1/2 pounds small white potatoes, peeled and sliced into 1/4 inch rounds
1/2 teaspoon coarse sea salt
freshly ground peppercorns
1 tablespoon finely chopped parsley

In heavy bottomed 10-12 inch skillet, heat butter and olive oil over medium heat. Add potatoes, cook for about 15 minutes, turning gently to brown on both sides. Season and transfer to a platter to serve at once, sprinkled with parsley. They are traditionally arrange in a symmetrical ring around the meat or other main dish being served.
