Bread Salad with Balsamic Dressing
From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Substitute sun-dried tomatoes packed in olive oil if fresh tomatoes are not in season. Use any good quality left-over bread for this great salad!
2 tablespoons aged balsamic vinegar (not young)
1/4 cup extra virgin olive oil
loaf (less than 16 oz) hearty old world style wheat bread, crusts removed
coarse sea salt
freshly gorund peppercorns
1-2 red ripe tomatoes, chopped
1 medium onion, thinly sliced
1 cup fresh or frozen petite organic peas
handful of fresh basil leaves, torn into pieces
Whisk together the vinegar and oil. Cut bread into bite sized pieces. Toss everything together in a beautiful bowl.
