Sandwich Loaf

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. A great way to use a loaf of unsliced bread and several different sandwich fillings. The following is just a suggestion...

1 loaf unsliced loaf bread
softened butter, for spreading

Shrimp Filling:
1 hard cooked egg, chopped
1 cup salad shrimp, chopped
2-3 tablespoons finely chopped celery
zest of 1/2 lemon
2 tablespoons lemon juice
1/4 teaspoon sea salt
2-3 tablespoons mayonnaise

Cheese Pecan Filling:
3 oz pkg cream cheese, softened
1 cup toasted pecans, plain or spiced
1 cup or so of well drained crushed pineapple, or salsa, or apricot pepper sauce

Chicken Bacon Filling:
8 slices bacon, crisply cooked and crumbled
1 cup chopped cooked chicken
2-3 tablespoons mayonnaise
1-2 talespoons chopped sundried tomatoes or roasted red peppers
salt and pepper to taste

Prepare the fillings as desired. Cut loaf of bread horizontally into 4 equal slices. Spread one side of each of the three slices with softened buter. Place one slice, buttered side up, on a beautiful serving board or plate. Spread evenly with one of the fillings. Repeat with next layer and filling, etc. Top with remaining bread slice. Garnish and slice with a serrated bread knife.
