PuriFrom Dorothy McNett's Recipe Book at www.dorothymcnett.com. 2 1/4 cups unbleached all purpose flour Whisk flour and salt together and stir in water to make a stiff dough. Knead on a floured surface about 5 minutes, until smooth and satiny. Pinch off small pieces of dough; let rest on board about 20 minutes. Roll each piece of dough paper thin to about a 5 inch circle. In fryer or heavy bottomed saucepan, heat about 1 inch of oil to 365 degrees. Fry circles of dough, 1-2 at a time. Brown on both sides and then place on paper towels to drain.
