California Golden Green Salad

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. This dressing is wonderful over any combination of fresh greens, and with the addition of pre-cooked cold slivered meat, fish, or chicken it is sure to please!

4-5 fresh juicy ripe apricots or peaches
4-5 fresh basil leaves (about 2 tablespoons)
1/4 cup white wine vinegar (white balsamic)
2 tablespoons crystalline brown sugar
1/4 teaspoon fine sea salt
1/4 teaspoon freshly ground peppercorns
1/2 cup extra virgin olive oil

fresh greens
1-2 sliced smoked chicken breasts

In food processor or blender, whirl the apricots or peaches with the basil and then add vinegar, sugar, salt, pepper and oil. Pour this over salad greens of your choice, and then arrange slivers of the cold chicken in and around the greens. Serve!
