Watch the timing, do not overcook! 1 cup all purpose unbleached flour Combine flour, sugar, cinnamon, soda, and salt. Blend in remaining ingredients except for brandy. Pour into 6-8 cup glass, ceramic or silicone ring mold. Cover with a ceramic plate. Microwave on Half power 12-15 minutes, or until top is set. Allow to stand 15-20 minutes, then invert onto serving platter. In glass measuring cup, microwave 1/4 cup brandy or rum on High 15-20 seconds. Ignite and pour over pudding.
