Steamed Plum Pudding

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Use your microwave oven to do the steaming, it is so much better! Watch the timing, do not overcook!

1 cup all purpose unbleached flour
1 cup sugar
1 teaspoon cinnamon
2 teaspoons baking soda
1/4 teaspoon fine sea salt
1 cup chopped nuts (optional)
1 cup marmalade OR 1 cup ripe mashed persimmon pulp or other fruit puree
1/2 cup milk
3/4 teaspoon pure vanilla extract or vanilla paste
1 tablespoon olive oil

1/4 cup brandy

Combine flour, sugar, cinnamon, soda, and salt. Blend in remaining ingredients except for brandy. Pour into 6-8 cup glass, ceramic or silicone ring mold. Cover with a ceramic plate. Microwave on Half power 12-15 minutes, or until top is set. Allow to stand 15-20 minutes, then invert onto serving platter. In glass measuring cup, microwave 1/4 cup brandy or rum on High 15-20 seconds. Ignite and pour over pudding.
