Favorite Family Meat Loaf

1 pound ground lean beef, or ground turkey, or a combination of ground meats
2 slices bread (whole wheat is best)
1/2 green pepper
1 medium onion
1 clove garlic
1 sprig parsley
1/2 cup tomato sauce (or substitute catsup, barbecue sauce, salsa)
1/2 teaspoon pepper
1/4 cup catsup
1 tablespoon prepared mustard
1 tablespoon brown sugar

In processor, chop bread, green pepper, onion, garlic, and parsley. Lightly mix in ground meat, tomato sauce, and pepper. Loosely pack mixture into loaf dish or pan. Mix catsup, mustard, and brown sugar; pour evenly over meat loaf. Preheat oven to 375 degrees. Bake 45-60 minutes.



Or, microwave, uncovered, on High 10 to 12 minutes. (Use a glass, silicone, or ceramic baking pan. Allow to stand 5 to 8 minutes before slicing. Makes 5 to 6 servings.
