Oyster Sauce Beef

1 pound beef steak, such as top round, top sirloin, or flank steak
1/4 cup soy sauce
2 cloves garlic, minced or pressed
1-inch piece fresh ginger root, peeled and thinly sliced
1 tablespoon cornstarch

2 tablespoons olive or peanut oil

1 medium onion, slivered
2-3 cloves garlic, slivered
1 green pepper, seeded and cut into strips

3/4 cup regular-strength beef broth
2 tablespoons soy sauce
2 tablespoons oyster sauce
1 1/2 tablespoons cornstarch
dash Tabasco sauce or 1/4 teaspoon Zip
1/4 teaspoon freshly ground pepper
1/2 pound fresh bean sprouts, rinsed and well drained
snipped fresh cilantro or parsley

Slice the meat, cutting on the diagonal, into very thin strips, about 1/16-inch thick (freeze meat partially for ease in cutting thin slices). Marinate meat strips in mixture of soy sauce, garlic, ginger, and cornstarch for at least 1 hour. Then heat wok or stir-fry pan, adding the 2 tablespoons oil. When hot, add the marinated strips and cook and stir 2-3 minutes, or until meat is done. Remove meat to platter. If necessary, add a little more oil to the wok and then add the vegetables, cooking and stirring for several minutes. In meantime, whisk together the broth, soy sauce, oyster sauce cornstarch, hot sauce or Zip, and pepper. Add to vegetables and cook and stir until sauce thickens slightly and takes on a clear sheen. Add the cooked meat, the bean sprouts, and the snipped herbs. Serve!
