Cheese Sauce

3 tablespoons butter or olive oil
3 tablespoons flour
1 1/2 cups milk (low-fat or regular)
1/4 teaspoon pepper or Tabasco
1/2 cup grated cheese (Our Aged Gouda is fabulous here!)
Microwave butter 30 seconds in large batter bowl. Whisk in flour, milk, and seasonings. Microwave on High 2 minutes. Whisk well. Microwave another 3-4 minutes, or until thickened, whisking in cheese. Serve over vegetables, or use as a dip for raw vegetables.
