Goulash Soup

1 large onion, chopped
1 green pepper, seeded and chopped
2 tablespoons olive oil
4 tablespoons tomato paste
1 teaspoon salt
1/4 teaspoon freshly ground pepper
1 pound boneless top round steak, cut into 1/4 inch cubes
5 cups hot water
juice of 1 lemon
2 cloves garlic, minced or pressed
1 teaspoon caraway seed
2 tablespoons paprika (preferably sweet Hungarian)

Combine onion, green pepper, and oil in 4-quart casserole, or clay simmer pot. If using clay pot, soak lid in water 10 minutes before using. Microwave, uncovered, on High 4 minutes. Stir in remaining ingredients. Microwave, covered, on High 10 minutes. Reduce to Half Power and microwave 60 minutes longer. Makes 6-8 servings.
