Lentil Soup

From Dorothy Mcnett's Recipe Book at www.dorothymcnett.com. You can cook this in a heavy bottomed stock pot for about 60-70 minutes instead of the microwave, if desired. Equally wonderful!

2 1/2 cups good quality chicken broth
2 1/2 cups water
1 cup lentils
1 large onion, chopped
1-2 cloves garlic, minced
1 teaspoon good quality curry powder
1/2 teaspoon crushed coriander seeds
1/2 teaspoon salt
1/8 teaspoon crushed red chile (dried)
1 tablespoon olive oil
1/4 cup light cream (half and half) or low-fat yogurt cheese
1 lime, thinly sliced

Combine everything except for the cream and the lime in a 4 quart glass or ceramic casserole, or the clay pot. Microwave, covered, 12 minutes on full power, then reduce power to simmer and microwave for 40 minutes, or until lentils are tender. Stir in the cream or yogurt cheese, and serve with thinly sliced lime slices.
