Harvest Medley

1 onion, peeled and cut into wedges
2 large apples
3-4 chicken-apple sausages
Extra-virgin olive oil
Core and wedge apples. Drizzle small amount of extra-virgin olive oil into sauté pan. Sauté onions and apples together until onion begins to become translucent and apples begin to brown. Cut up sausages and add to apples and onions and cook until warmed through, about 5 minutes. Serve as is or over rice or pasta.
