Apricot SquaresFrom Dorothy McNett's Recipe Book at www.dorothymcnett.com. A great dessert, but equally spectacular served as a brunch or breakfast treat. A dollop of Caramel Sauce for serving is a great idea, as well. 1/2 cup butter Preheat oven to 350 degrees. Soften the butter for 30 seconds on half power in microwave. Cream it well with the first 1/2 cup of sugar. Whisk in eggs until light colored. Whisk together the flour and baking powder, and then stir into the egg mixture. Pour into a buttered and floured square cake pan. Press the apricots into the batter skin side down. Place in each half a dot of butter and brandy or juice. Sprinkle with the remaining 1/2 cup of sugar and orange rind. Bake 30-40 minutes. Recipe created 1995-07-04. © 1996-2008 Dorothy McNett.
