Baked Potatoes

russet baking potatoes, scrubbed well
butter, optional
salsa or roasted garlic

Pierce each potato with a fork. Wrap each potato in waxed paper. Elevate on a rack or on a plate. Microwave on high, using 4 minutes per potato as a guide, or until each potato pierces easily with a fork. Allow to stand, covered, for several minutes before serving. Serve with butter, if desired, and then top with salsa or roasted garlic.
