Old Fashioned Baked Meat Loaf

1 pound lean ground beef (ground round steak)
1-2 tablespoons horseradish
2 tablespoons catsup or Shaslik sauce
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper
1/2 cup half and half or low-fat milk, your choice
1/2 medium onion, finely chopped
3-6 cloves garlic
1 teaspoon Italian seasonings, or use some dried basil, thyme, and oregano
1 cup broken up crackers plus 1/4 cup cracker crumbs
1/2 cup water, beef or vegetable stock

Preheat oven to 350 degrees.

Combine ground meat, horseradish, catsup, salt, pepper and half and half or milk in a bowl. Finely chop onion and garlic. Add to the meat mixture along with the seasonings and the broken-up crackers. Mold the mixture into a loaf shape in a shallow baking pan and sprinkle it with the chopped cracker crumbs. Pour in the water or stock. Bake for about 1 hour, adding more liquid, if necessary. Garnish with chopped parsley and sliced tomatoes. This also makes good meatballs by simply shaping them and sauteing them in a skillet with some olive oil.
