Cut out any blemishes and cut into smaller pieces. Add raisins, dates, vinegar, and lime juice. Quarter lemon, remove seeds, and slice very thin. Add to mixture and microwave on high for 5 minutes. Stir. Add sugar and stir. Microwave 5 min. on high, and then 5-8 minutes on medium power, or until mixture is thick. Add ginger and nuts and pour into hot, sterilized jars.
