Fresh Sausage Patties

1 pound turkey meat, or fresh pork butt, cut into 1" cubes
2 tablespoons olive oil
3 tablespoons water, or broth
3 tablespoons fresh parsley leaves
1 tablespoon chopped green onions
1-2 cloves garlic
1/2 teaspoon dried sage
1/2 teaspoon dried marjoram
1/2 teaspoon sea salt
1/2 teaspoon pepper
1/4 teaspoon crystalline brown sugar
1/4 teaspoon dried thyme
1/8 teaspoon nutmeg

Combine all ingredients in a large bowl. Process in food processor in two batches. To make patties, measure 1/4 cup sausage mixture for each patty. Heat saute pan or skillet, add a little olive oil and cook sausage patties 2-3 minutes per side, or until done.
